Inspired by the TV show, I made an attempt at this recipe yesterday. I used halibut instead of the prescribed fish, and the result didn't quite look like the picture, but it was still pretty tasty, and looked reasonably posh on the plate.

Cooking to a recipe = recommended

I've never cooked with salsify before (never even seen it un supermarkets). What does it taste like?

Well, I was expecting a strong flavour - it's also known as the oyster plant apparently, because it's supposed to taste of oysters - but it was quite subtle, really. Like a root vegetable that tastes slightly of the sea. But I would expect you'd get a more powerful taste if you were cooking big lumps of it in a stew, rather than in this recipe, which just called for a few thin slices sautéed.

I bought it in Selfridges' food hall, by the way, should you wish to experiment...
